Cooking with your Future Baby Mama: Cod W/ Spicy Cajun Cream Sauce

I am what you would consider an intuitive cook. I only follow a recipe once just to understand the structure and then I like to innovate on it to make it my own. I am also big on flavor. Even a healthy dish can taste great if you season every step. Using JUST salt and pepper is not gonna cut it. Anyway, summer is coming and I have been trying to make healthy alternatives to dishes I love by being inspired by the flavor of that dish. Case in point Cajun alfredo pasta. I’m not fooling with pasta right now and tried to work with items I already had on hand to finesse a dish and satisfy my craving and boom. This is what came of it. I posted it on my Instagram and go so many dms about “Where the recipe?!” I ended up writing it out and I figured why not just throw it up here?

So here yall go so you can stop bothering me lol. Again since I am an intuitive cook, writing out recipes is always the last thing I think about because I’m so focused on what I’m doing in the moment. Imma do better 🙂

Ingredients:

Heavy cream

Olive oil

White wine (optional)

Shallots minced

2 cloves of minced garlic

Crushed red pepper

Garlic powder

Thyme

Oregano

Cajun/ creole seasoning

Spinach I used frozen fresh works too

Salt pepper

Fish of choice

Sun dried tomatoes

Parmesan cheese

1 lemon

Parsley

Tomato paste

1. I seared the fish on both sides for about 2-3mins seasoned with salt and pepper and took out the pan.

2. Deglazed with the white wine 1/4 cup. Wait about 1-2 Added shallots and garlic sautéed for 3 mins more.

3. Added about a tables spoon of tomato paste and sauté with shallots and garlic. Add 1/2 cup of heavy cream bring to a light simmer and then add all seasonings mentioned above to taste. Bring down to low add spinach chopped sundries and fish back in to finish cooking I blasted the fish with the sauce to get all that flavor on top. finish with zest from Lemon, tablespoon of Lemon juice and grated Parmesan cheese parsley and more red pepper flakes
